Born local, need. the bread is made to order weekly by creator and hobby-baker Audrey Foy, who has crafted a signature sourdough so good it needs to be shared. It’s the super wholesome, incomparable taste of artisanal homemade bread packed full of good stuff that will add delight and satisfaction to your family’s mealtimes.

The signature seeded sourdough loaf is loaded with the healthy addition of eight different types of seeds which gives a heavier texture and nuttiness, without masking that distinctive sourdough flavour.

The perfect blend of rye flour, wheat flour, soy flour, malted barley and mixed grains is balanced with delicious sunflower seeds, flax seeds, white sesame seeds, black sesame seeds, poppy seeds, chia seeds, pumpkin seeds, and nigella seeds, forming a filling and tasty base to any meal.

Our sourdough takes 36 hours to bake.
We start by activating Ned the starter, feeding him with flour and water, before leaving Ned out on the bench to get nice and bubbly.
Once Ned’s ready, he’s then kneaded into the other ingredients where the mix is allowed to double in size before shaping into loaves. Over the next couple of hours, it’s over to re-laminating a few times, to increase gluten and texture, before placing the loaves into proofing baskets in the fridge overnight for their last slow rise. The loaves spend the night developing flavour, before finally loaves are tipped out, scored and baked.

Made in Newtown from locally grown apricots, less than 50% sugar, vanilla beans and lemon juice, the apricot conserve is crafted in small, concentrated batches over 2-3 hours and makes a beautiful complement to the signature sourdough. Limited quantities available.

Currently also available in Plum, Luisa Plum, and Marmalade.

the focaccia.​

Need more bread? 
Our sourdough focaccia, like our signature seeded loaf, takes 36 hours to make and develop its full flavour.
Made with Australian high protein baker’s flour, our pillowy focaccia slabs are baked with garlic infused extra virgin olive oil, homegrown rosemary, Murray River pink salt, and lashings of fresh pure cream.
Best enjoyed fresh and for maximum enjoyment, heat through in a hot oven for a few minutes just prior to eating.

Our crisp crackers are perfect for cheeseboards, with dips, on grazing platters, or simply delicious on their own.

the fruit loaf.​

Our spiced fruit sourdough loaf is the newest addition to our permanent menu and it’s already a firm breakfast (or any time of day) favourite in our house.
Made with a blend of wheat and rye flours, loads of mixed dried fruit and peel, and the perfect amount of spice. Each loaf is proofed for a minimum 36 hours, for maximum flavour and just the right texture.

the seeded multigrain.​

The younger sibling to our signature seeded loaf, the seeded multigrain loaf is lighter in texture with a white base, but still loaded with all of the goodness of our signature seed and grain mix.
